The harder question is what happens next: does it snap back after the hangover fades, does it linger for a day or two, or is a single night capable of leaving a mark that outlasts the visible symptoms entirely.
That question splits into two very different timelines once you look at the research, one for a single night of drinking and one for sustained, regular alcohol use. Conflating them is where a lot of the confusion seems to start.

That structure is what lets the finding of sympathetic activation and disrupted HRV get pinned to a specific stretch of time, not a vague 'the next day' impression.
The related sub-analysis adds a dose dimension: participants who drank more, and whose breath alcohol concentration peaked higher, showed a larger cardiac response. That does not tell us the exact hour HRV returns to a personal baseline, the abstract does not report that endpoint. But it does establish that the disruption is not a fixed, one-size-fits-all blip, it scales with how much alcohol went in and how high blood alcohol climbed.
This is a different question from what shows up on an overnight HRV drop unrelated to drinking, where sleep, illness, or stress can produce a similar-looking number through an entirely different pathway. The alcohol-specific research is tracking a known chemical exposure with a known timeline, not an unexplained dip.
When drinking is a pattern, not a single night
The picture changes when the lens shifts from one binge to sustained alcohol use. A review of chronic and dependent alcohol users found that acute alcohol consumption reduces resting HRV in nonalcoholic and chronic users alike, but the more striking finding involves what happens with sustained use: resting HRV in alcohol-dependent subjects only improved after at least four months of abstinence. That is a fundamentally longer timeline than the hours-to-days window a single binge study is built to measure.
A separate review on HRV and alcohol found something else worth separating out. People with alcohol use disorder showed higher HRV reactivity to acute stress compared to controls, and that heightened reactivity was tied to more craving and faster relapse, with that reactive measure improving more slowly with abstinence than resting HRV did. So there appear to be at least two different clocks running, one for resting HRV and one for how the nervous system reacts under stress, and they do not move at the same speed.

The four-month abstinence finding comes from research on alcohol-dependent and chronic heavy drinkers specifically. It says nothing about how long HRV stays suppressed after occasional or moderate drinking in someone without a dependence pattern, that timeline is not established in this evidence.
Why the drinking-amount detail matters for interpreting a number
If HRV suppression scales with how much was consumed and how high blood alcohol concentration rose, as the binge-drinking sub-analysis found, then two nights that both count as 'drinking' on a log could plausibly leave very different marks on the following days. The research does not offer a formula for translating drink count into recovery hours, but it does rule out treating all drinking occasions as interchangeable for HRV purposes.
What these studies are actually measuring matters too.
